Preheat over to 375 degrees and lightly coat a 9x13" casserole baking dish with olive oil.
16 oz Bag Organic Brown Rice Penne Pasta
24 oz Organic Spaghetti Sauce (I use Full Circle's Roasted Garlic)
16 oz Can Organic Diced Tomatoes (drained)
6 oz Can Organic Tomato Paste
12.5 oz Can of Chicken (rinsed) OR 1 lb ground chicken or turkey
Light Mozzarella Cheese
Red Chili Pepper Flakes (optional)
If using the 1 lb of chicken or turkey meat, brown and set aside. Cook brown rice penne pasta per package directions. Drain (do not rinse) and put pasta back in pot. Add spaghetti sauce, diced tomatoes, tomato paste, chicken, and seasonings to taste. Mix thoroughly. Evenly distribute in casserole dish. Lightly sprinkle with cheddar and mozzarella cheeses. Place in oven for 20 minutes until cheeses are melted and whoala, dinner is ready! Serve with a salad:)
