Turkey Meatloaf

Preheat oven to 375 degrees. Lightly coat a loaf pan with olive oil and set aside.

 

2 Lbs. Turkey Meat

1 Cup Whole Wheat, Organic Bread Crumbs or Oatmeal

1 Whole Egg

1 Egg White

1 Tbsp. Mustard

3 Tbsp. low-sugar BBQ Sauce

* Now, the following is where you get creative. Chop, shred, and throw in whatever veggies you like! I use:

1 Med. Carrot

2 Stalks Celery

1 Onion

1 Zucchini

Pepper, Garlic Powder, Onion Powder, and Red Chili Pepper Flakes (optional) to taste

 

In a large bowl, put the turkey meat and bread crumbs or oatmeal. Set aside. Whisk eggs and add mustard and BBQ sauce to eggs, mix and add to turkey meat. Cut up and/or shred your desired veggies and throw them in the bowl! Add seasonings. Roll up those sleeves and squish everything together, mixing well. Form into loaf shape in bowl and transfer to loaf pan. Bake at 375 degrees for approximately 45 minutes. Better yet, double up and cook two (for approximately and hour) so you have plenty for leftovers and meal prep for the week!
